mrunalineecom Today we will make Raksha Bandhan special " Rasgulla ( Rasagola ) " It is a very soft, juicy and mouth melting sweet Odisha has received the Geographical indication (GI ) tag for Odisha Rasgulla ( Rasagola ) Try this recipe by following the step-by-step procedure and tips Share the video with your friends and relatives through Whatsapp or Facebook Subscribe the channel and press the bell icon to get the notification of our latest videos Let's start today's recipe We need all these ingredients for making this dish Milk – 1 ltr ( full cream milk or whole milk is best for this sweet ) Vinegar ( or lemon juice ) Sugar – 250 gm Keora water ( or green cardamom powder ) for fragrance Boil the 1 ltr milk on high flame Reduce the flame now Pour the required Vinegar or lemon juice to make the chhena ) The Chhena Water should be light green or clear ( like I have shown ) Cottage cheese ( Chhena ) is ready now For this I have used 3 tbsp of vinegar in it ( or use as required ) Immediately stain the Chhena using a thin cotton clothe , otherwise the chhena will be hard or chewy You can reuse this Chhena water for agin making the Chhena or can knead the atta dough Wash it once or twice ( otherwise 4-5 times if you have used lemon juice to make the chhena ) ** Do not squeeze the Chhena much ** Squeeze the chhena very lightly to remove the extra water and hang it for an hour It's been 1½ hour now Take it out Knead it very nicely with your palm ( like I have shown ) It's been 12 minutes now ** Make the smooth and lumps free Chhena dough ** so that Rasgulla will not break Press and make it round shape very gently ( crack free ) Like this Make the remaining Total 9 balls are ready cook now Here I have added 1 cup ( 250 gm ) Sugar + 5 cups of water to make the Sugar syrup Simmer it on high flame Water has started boiling now Put 2 tbsp raw milk to get the impurities ( foam like ) from sugar and take out the impurities using a stainer ** The sugar syrup should be thin and piping hot ** Taking out 1/2 cup of hot sugar syrup now ( add later if necessary ) Carefully put the prepared Chhena balls into the piping hot sugar syrup Now cover cook it for 5 minutes on high flame Always use a tight lid to cover and cook the rasgullas ( also seal the hole of the lid if you have ) Open the lid after 5 minutes Rasgullas has become double in size Now very carefully flip the rasgullas as they are very soft now Cover it agin for 5 minutes on medium -high flame Add hot sugar syrup or hot water if your syrup has reduced or getting thick Add 1 tsp Keora water ( or 1 tsp green cardamom powder ) for fragrance Cook it agin for 5 minutes on medium flame ( without covering it ) Now cover the lid and cook it for 5 minutes ( on medium ) ** Here I have cooked the Chhena balls for total 20 minutes ** Let these beautiful and aromatic Rasgullas cool down completely It's been 2 hours now Let's check the Rasgullas by taking some room temperature water ** The Rasgulla should be sit under the water if it has been nicely cooked ** Our super soft and juicy Rasgulla or Rasagola is ready to serve now Enjoy it warm or chilled So try this recipe by following the procedure and tips And share with us your experience in the comment section below Thank you See you soon in my next video You could subscribe my channel by clicking on this face icon
