3 Easy Vegan Recipes + Meal Plan DIY


[UltraVid id=86 ][Music] hey guys it’s live welcome back to my channel and happy at 2018 I’m hoping that this video will be able to give you guys some inspiration for some healthy and quick and easy and vegan meals going forward I also decided that I want to start including some little DIYs on this channel in certain videos and so today is going to be the first one of those so today I thought that since these meals are really good for kind of like preparing in advance and meal prepping and planning ahead I thought I would just show you a super-fun meal prep DIY that you can do in any sort of notebook or your journal or like bullet journal or whatever you use it’s a really simple idea but it actually works really really well so that will be at the end of this video so stay tuned for that so yeah that is everything I have to say for now I’m super excited to share this video with you guys so let’s get into it you’re going to start by peeling and dropping a sweet potato and then just put it onto a parchment-lined tray and drizzle it with a little bit of oil and add some salt and pepper this is just keeping it really simple then just bake that according to the recipe which is linked in the description box below in a medium pan on medium heat add some oil followed by the white onions and then just stir fry those for a couple minutes and then we’re adding some cumin seeds the ground coriander garlic powder and chili powder followed by some frozen cauliflower I like to use frozen because I find it just takes a lot less time to cook and it’s really convenient then you want to add your chickpeas and some canned tomatoes and then just simmer that for about 15 minutes [Music] for the sauce we are adding some nut butter soy sauce coconut milk sriracha and maple syrup and just whisking that until it’s smooth you might need to add a little bit of water as you go to make it as thin as you like I added a couple tablespoons and that was perfect to assemble the bowl I added some cooked quinoa and some steamed broccoli and then I just added the cooked sweet potato chunks the chickpea mixture and drizzled on some of the sauce on top and then added some on the side as well again we are starting by peeling and chopping a potato this time it is a white potato and you just want to put that in a pot with some water and boil it until it is nice and soft once it’s cooked you can drain the potato and then just mash it with a fork or a masher I like to add some almond milk salt and pepper and then just mash it until it’s nice and fluffy then you want to chop up some cauliflower into bite-size pieces this is fresh cauliflower this time for the batter we are going to be taking some flour and almond milk and then whisking that with a little bit of black pepper [Music] and then for the breading we are going to add some breadcrumbs to a bowl followed by some nutritional yeast and then all you’re going to do is dip each piece of cauliflower into the batter and then dip it into the breadcrumb mixture until it is coated and put it on a parchment lined baking tray I wanted to give mine a barbecue flavor so when it was done I just tossed it in some barbecue sauce and then to make the bowl I just added the mashed potato the cauliflower bites some corn that I cooked and I served it with some gravy on the side and I can link a gravy recipe below for those of you who are interested [Music] for this bowl I used my favorite crispy tofu recipe and you can find this in my high-protein recipes video I will link it in the top of the screen here and in the description box below so I just took that out of the freezer and then baked it in my toaster oven and then to assemble the bowl I just had some cooked brown rice and then I added some green peas these were frozen and I just cooked them in the microwave I also added some broccoli the crispy tofu some shredded carrot and then some teriyaki sauce to dip this is super easy to prepare and assemble and it tastes absolutely amazing [Music] so all you’re going to need for this little meal planning DIY is a notebook some markers a pen and a ruler so at the top I just wrote weekly meal plan and then you want to start at the top and write Monday skip five lines and on the sixth line you’re going to write Tuesday and then just repeat that up until Friday so you want to have five blank lines in between each one below that you want to write V LD and s so breakfast lunch dinner and snacks and then on the other side you want to you section off a smaller column here and then again an even smaller one and then cut that in half so you want to have a large column smaller column and then to really small column at the top of the smallest you’re going to write an H and an n so basically you’re just going to plan out the meals that you want to eat for the week so for example Wednesday breakfast I put overnight oats and then in the ingredients list you’re going to go over and write down the ingredients that you need for that recipe and then check off which ones you have and which ones you need so here I had oats but I needed to pick up almond milk and blueberries I don’t write down individual spices usually I mostly just write produce and kind of staple foods like rice and stuff like that so you can see here is a finished one that I did so I just wrote down kind of a sample meal plan I guess of some foods that I would eat throughout the week and then I just wrote down kind of like a grocery list thing on the side and checked off what I have and what I need and that’s super helpful because then you can just pack this up and take it to the grocery store with you so I really hope you guys enjoyed this video I hope it gave you some new recipe ideas and I really hope you
