Hello Ladies and Gentlemen, this is chef Guru From Guruscookingin with Aloo Paratha Let's get started with the Ingredients

Potatoes 1 Medium Onion Ginger Green Chillies Coriander Seeds Salt Red Chilli Flakes Ajwain/Carom Seeds Powder Coriander/Cilantro Wheat Flour Garam Masala/Spices Mixture Vegetable Cooking Oil Water Butter I have taken a skillet in which i have added around 15 medium and large sized potatoes these potatoes have been boiled and peeled To these potatoes, I'm gonna add a quarter cup of chopped onions and 1/8th cup of chopped Ginger Here we are trying to create the stuffing for the Aloo Parathas Add 2 chopped Green Chillies And 1/2 teaspoon of Coriander seeds Add 2 teaspoons of Salt Add 1/2 teaspoon of Red Chilli Powder Lets mash the potatoes Remember not to mash the potatoes completely and do not crush them to make them very coarse Now add 1/4 teaspoon of Garam Masala 1/4 cup of Coriander also known as cilantro mix them nicely This is how your stuffing should look Keep it aside and lets prepare wheat for Aloo Paratha Take a bowl and add 2 cups of Wheat Flour Add 1/2 teaspoon of Salt 1/8 teaspoon of Ajwain/Carom Seeds Powder Add 1 teaspoon of Vegetable Oil Add 1 and 1/4 cup of Water Dough for Aloo Paratha will look like this Smash and kneed it properly The more you kneed it, the softer and fluffier your Aloo Parathas will come This is what you get, something like a bread Add some dry wheat flour and roll it so that we can cut it later on in to equal pieces it should look something like this we will dice it now in to equal pieces using a knife Now lets make round balls out of these dices To make round balls, take one of these dices in your left palm roll them gently in clockwise direction Repeat same procedure for rest of the dices Lets prepare the filling, for that make sure you have a dry ground take the ball and keep pressing at the corner as you can see do not touch the inner core and let it remain thick or else the inner part will tear easily while rolling it with rolling pin Place the stuffing at the center and seal it up like this Apply some dry wheat flour before using the rolling pin Make sure you press the edges first roll it evenly while rolling the pin to make a proper circle out of it Flip it to avoid sticking it to the ground and continue rolling the other side Once you get the paratha of desired size Toss it from one hand to another so that the dry flour falls off Add little ghee or clarified butter to the hot pan Drop the paratha to fry it Add more ghee and let it fry for almost 45 secs to 1 minute untill you flip it You can see a nice golden crisp color, half cooked Once its cooked you can serve it with curd and butter cube Flip it again until its cooked all over This is what you get Ladies and Gentlemen, the Aloo Ka Paratha 🙂 In Punjabi its called Aloo Da Paratha
