Today's recipe is for a basic rasam A Tamil style meals is incomplete without the rasam Lets see how to make it First we will prepare a masala by coarsely grinding cumin, peppercorns, garlic, green chili & coriander stalks Coriander stalks is optional If you don't like the rasam spicy, you can add just 1 green chili or none Add some hot water to the tomato and peel off the skin You can skip this step and instead add diced tomatoes Soak tamarind in hot water After 5 minutes, extract the pulp, filter and keep aside In a pan, heat some oil and splutter mustard seeds Add 1 dry red chili Now add the coarsely ground masala and fry in medium heat for 2 minutes Add a pinch of asafoetida powder Now add the tomatoes Add required salt Cook for 2 minutes Now add the tamarind extract Also 1 cup water Add a pinch of turmeric powder Close the lid
Let it stay on medium – low heat for at least 15 minutes The rasam should not boil as this will increase the sourness of the tamarind Let it heat for 15 – 20 minutes and then we can switch off the flame right before it starts to boil Its been 20 minutes now You can check and adjust for salt Garnish with lots of coriander leaves You will know the rasam is ready when the white froth starts appearing (as seen here) You can switch off the flame now Rasam is ready now Let it sit for a minimum of half hour before consuming For more videos please like, share and subscribe to my channel
