Beer Battered Fish and Chips with Home-made Tartar Sauce Part 1: Tartar Sauce Chop 2 Shallots 4 Gherkins 1 Tablespoon of Capers Add 5 Egg Yolks to the Food Processor Blend Egg Yolks on 'Medium Speed' Drizzle 400ml of Salad Oil slowly as the Mixture blends Mix the Yolks and Oil together very well Add 1/2 Tablespoon of Pepper 1/2 Tablespoon of Salt 2 Tablespoons of White Wine Vinegar 1/2 Tablespoon of Sugar Squeeze juice from 1/2 a Lemon Add the Mixture with Chopped Gherkins, Capers and Shallots Blend both Mixtures together till a Mayonnaise-like texture is formed Part 2: Fish and Chips Marinate 600g of Fillets with 10g of Salt 10g of Cracked Black Pepper 100ml of Beer Set the Fillets aside Add 200g of Flour to a Mixing Bowl 30g of Baking Powder 1 Egg Mix them together Pour 300ml of Beer to the Mixture Stir the Mixture to form a Slurry Batter Keep Batter chilled for Best Results Heat up 800ml of Oil Dip Fillets into Batter Fry Fish Fillets in 800ml of Hot Oil Add 400g of Frozen Fries Fry Fillets till their crusts turn crispy and brown Garnish Fish Fillets with Cracked Black Pepper A Pinch of Salt Serve with Tartar Sauce Chopped Parsley And 2 Slices of Lemon
