Braised Chicken and Gravy – Low Carb Keto Comfort Food Recipe

Welcome all! Papa G here Today I present my Braised Chicken and Gravy

This tender and delicious recipe can be served over riced cauliflower as a chicken and rice meal; or on its own, complemented by your favorite vegetable Either choice brings home a recipe that has comfort food written all over it Let's get started We'll start by makinga simple chicken seasoning with some salt; ground black pepper; onion powder; garlic powder; some dried sage; and a little cayenne pepper and give this a quick mix All the ingredient amounts will be listed in the description below Open up 6 boneless, skinless, chicken thighs and generously apply our seasoning Flip and season both sides

Be sure to reserve the rest of the seasoning for later Add 2 tablespoons of oil to a Dutch oven on medium-high heat Place the chicken in the oil and fry for about 2 and 1/2 minutes Flip and fry the other side for another 2 and 1/2 minutes as well Remove the chicken

Add some diced bell pepper and onion Give this a stir to coat the vegetables in the chicken grease Now add the rest of the chicken seasoning, along with a little Creole seasoning as well Cook this for about seven minutes or until the vegetables soften Add one and a half cups of chicken stock and a little Worcestershire sauce

Give a mix and let come to a boil Return our chicken to the pot Be sure to add any accumulated juices Reduce the heat to medium-low and cover We want to let this cook for about 30 minutes

During this cooking time you'll want to give a gentle stir about every 10 minutes or so After 30 minutes of cooking, remove the cover and give a quick stir Add a half a teaspoon of xanthan gum to a separate 1/2 cup of chicken stock and mix with a whisk Pour this into the pot along with some heavy cream; and a little browning sauce Give a stir to combine

Bring the heat back up to medium-high and continue to cook stir uncovered Once it begins to thicken, stir in some chopped fresh parsley As I said in the opening, this is delicious served with a nice vegetable or some riced cauliflower It's so tender you can pull it with a fork Deeelicious!
