Butternut Pumpkin Squash Soup with Croutons Recipe – Cooking with Bosch



Butternut Squash Soup with Crouton and Sunflower Seeds Part 1: Croutons Pre-heat Oven to 180 degree celcius in 'Fan Mode' Cut 200g of Old Bread into 2cm cubes Chop 10g of Parsley Chop a Tablespoon of Garlic In a Mixing Bowl, add 200g of Softened Butter 1 Tablespoon of Garlic 1 Tablespoon of Pepper 1 Teaspoon of Salt 10g of Chopped Parsley Mix them Set Bread Cubes in a tray Coat them with garlic butter mixture Bake the Bread Cubes for about 5 Minutes Toss the bread cubes Continue baking for about 2 to 3 Minutes Part 2: Butternut Squash Soup Remove seeds from Butternut De-skin and chop the Butternut into pieces Chop 10g of Garlic 80g of Onion 20g of Celery Add 20g of Unsalted Butter to a Lightly Heated Pot Fry the Chopped Celery and Onion till they soften Add Chopped Garlic 500g of Sliced Butternut Fry the Butternut till it softens Add 400ml of Chicken Stock 200ml of Fresh Milk or Whipping Cream Add 2 Stalk of Fresh Thyme Salt Pepper Sugar Bring the ingredients to a Boil Then Blend the Mixture with the Blender Attachment from the Food Processor Strain Soup before serving Garnish with Croutons Sunflower Seeds Parsley And a Pinch of Freshly Cracked Black Pepper
