Chanar Payesh today's recipe! Chanar Payesh or paneer kheer is a very famous traditional bengali dessert For this dessert I am going to show you the simplest recipe

Where we only need these four ingredients So let's start with making the fresh chana or paneer So for this Take a heavy bottomed vessel, and now we will add milk Bring it to boil and keep stirring to avoid burning of milk So milk is boiling now, lets add the lemon juice Keep stirring cook for few seconds until the milk solids gets separated from the water Pour this curdled milk to over a strainer, squeeze out all the water and then we need to rinse it as much as possible

if you do not rinse the Chana or paneer thenyou will get the smell of lemon while having it

After 1 hr, take out the Chana from the strainer make sure the Chana or paneer should have too much moisture nor be too dry Take a heavy bottomed vessel,preferably non stick and then add milk On medium heat, sir continuously and boil the milk Milk is boiling now, so simmer the gas and add the Chana

Let it simmer till reduced to half the original quantity You need to stir it continuously Will add crushed green cardamom Mix well and then cook it on a low flame for 10-12 minutes Now add 4 table spoons of sugar, stir and simmer, till it dissolves

Now add 3 tbsp of crushed walnuts and stir well If you want to replace the walnuts, you can add cashewnuts or almonds, any other dry fruit of your choice When the payesh/kheer will become semi thick, turn off the heat Hmm the consistency should be like rice kheer it will take another 5 mins
