Easy Vegan Lemon Loaf Cake Recipe (oil-free, wfpb)



[upbeat music is playing] Hi everyone welcome back to a new video here on Ve Eat Cook Bake I am Jasmin if you don't know me and Iam the face behind Ve Eat Cook Bake Today we are going to make an amazing yummy lemon loaf For this lemon bread we use whole wheat flour

I used whole white wheat flour some apple sauce, fresh lemon juice and what I forgot to tell you is that we use unsweetened apple juice, ehm apple sauce sorry you can optional make lemon icing for this you use ground raw cane sugar and fresh lemon juice but it is optional you don't have to do it, normally we eat it without it but for the photos I made some This lemon loaf is perfect and super quick prepared and perfect for desserts, brunch, picnic, potluck whenever you crave something sweet and refreshing it is a perfect for an afternoon snack like for your next cup of tea or coffee In Germany you meet mostly with family or friends for a cup of coffee We call it Kaffeekranz and usually we eat cake with it Now let us prepare this amazing lemon loaf Preheat the oven to 350°F or 180°C Now soak the cashews for 10 minutes In the meantime weigh the dry ingredients and put them in a bowl [upbeat music] prepare a loaf pan [upbeat music] take a hight speed blender and add all the wet ingredients except the sparkling water to the mixer and mix until a creamy consistency is created [upbeat music] Add all the ingredients with the sparkling water to the dry ingredients and stir into a dough [upbeat music] Now put the dough in the loaf pan and bake the loaf between 30 and 45 minutes ehm make sure you make the tootpick test to see if the dough is baked through so when the dough still sticks on the toothpick it takes a little longer until baked Let the cake cool completely before you spread the icing over it To do it stire simply the ingredients and spread it over the cake enjoy it with a cup of tea or coffee [upbeat music]
