Grilled Beef Wrapped in Mustard Greens (Bò Nướng Cuốn Cải)



Hi everyone it's Helen here! Today I will make "Bò nướng cuốn cải'' or grilled beef wrapped in mustard green This is a great option for barbeque parties of course, and it is also a really nice drinking snack

The way I marinate the meat in this recipe it's a little bit different than the normal way and when I first found out about this method I was really surprised how it can change the flavor so stay tuned Let's begin! ( music) To marinate 500g of beef, We'll need 1 shallot which should be peeled and thinly sliced, 1 whole head of garlic about 12 cloves 2 red chili peppers and 2 to 3 bird's eye chilies You can use more or less chilies depending on how spicy you can take Finely chop the garlics and chilies I use a processor here to safe time Next heat 2 tbs of vegetable oil in a pan and fry the sliced shallots 'till slightly golden and then add the minced garlics and chilies and fry until fragrance

Then add 4 tbs of soy sauce, 2 tbs of sugar 1 tsp of chicken stock powder stir and simmer for 1 minute to dissolve completely and turn off the heat and leave to cool For the beef try to use tender cuts like loin,sirloin or eye of round Cut the beef into strips about the size of your little(pinky) finger about half and inch thick Then combine the beef with the marinate, mix well and cover and chill in the refrigerator for 1 hour or better overnight Normally, we'll put all the garlic,chilies and seasoning directly into the raw meat but by simmering it first like this the smell is gonna be a lot more fragrant and also the flavor of the seasoning is a lot deeper when you grill

One thing about grilling or cooking beef it's that you have to cook it on high heat and it will be great if you have a charcoal oven Today I will grill indoor with an electric grilling pan and just wait for it to turn really nice and hot and then I'm gonna spread the meat out on the grilling pan especially near to the griddle so later it's gonna gets some nice grilling marks flip to sear on all sides if you want the meat to be pink inside just cook for just 30 seconds or so To serve, tear a piece of mustard leave and wrap it and dip into the sauce which is a mix of green chilies, salt,condensed milk and lime juice It's pretty simple right? But it's so so so so fragrant and the flavor of the meat after grill is much more deeper than the normal method of marinating So I hope you will give it a try and if you do please share the photo on instagram with #Helenrecipes
