Aloha! Today I'm going to be showing you how to make Hawaiian Chocolate Chunk cookies It may sound a little different or unusual, but you've got to trust me These cookies are dreamy and amazing

It's like Hawaiian vacation meets Chocolate Chunk cookies Something really different and fun, especially to enjoy during those warm weather months The added bonus about this recipe is that if you start with one of my Peanut's Bake Shop Chocolate Chunk Cookie Kits, your list of ingredients after that is very, very short You just need some pineapple, coconut, macadamia nuts and you'll see the rest Open that up, pour that into your bowl right here and you can find these cookie kits on peanutsbakeshop

com And these cookie kits are vegan, non-GMO and gluten free Next we need some shredded coconut I get the unsweetened kind, the very very fine, dusty type like this Just a few tablespoons of canola oil

I get the non-GMO expeller pressed type I will provide a link in the description if you'd like to see what type I use Next, we're going to add some coconut sugar I just like that nice, rich brown sugar flavor that it provides Little extra sweetness with all the coconut and other Hawaiian yummy ingredients

Chop some macadamia nuts Feel free to use almonds if you like I like the slivered type, but I took a trip to Hawaii when I was a kid with my parents, and one thing I saw everywhere was macadamia nuts I also saw a lot of pineapple too, We'll be getting to that I like to chop the nuts into very small pieces

Transfer this over Final two ingredients? Pineapple and pineapple juice Now, thankfully you can just use the juice straight out of the can; just a couple tablespoons We need that extra moisture, but we also like that extra punch of pineapple flavor that this will provide And then finally we need some pineapple

So we have about a cup, maybe a little bit less than I'm going to put that on our cutting board Just want to give them a rough chop, I like to quarter each piece I want to try and aim for that That looks pretty great

I'm gonna add that to our bowl And that's it all we have to do now is stir Things are feeling very tropical in here right now, I have to say Alright, so you just really want to stir until all the flour's incorporated It might take a little bit; a good minute or so of stirring When it's all ready to go, it looks like that

I gotta admit, I want to swan dive into this bowl right now and just start eating the dough raw which you could because, you know, it's vegan, but I won't, I'm gonna show you how to make these cookies So I have a parchment lined baking sheet Parchment paper helps with cleanup and also prevents sticking, but if you don't have parchment paper, no big deal A good reliable non-stick sheet will do the trick Okay, this recipe makes twelve pretty good-sized cookies

So, right on our sheet Ok, we have a little extra dough I'm gonna add these

Now of course, you can always just make more cookies if you like, if you want them to be smaller Alright, that looks great! Now all we need to do is put these babies in the oven I already have my oven heated to 350 degrees I'll place these in there on the top shelf and bake for about 14 to 15 minutes Alright, we're right at the 15 minute mark so I'm gonna take these cookies out now I checked on them at the 14-minute mark, I felt like they needed a little bit of extra time, just one more minute What you want to look for is for the edges to be slightly brown

It's actually better to slightly under cook them than overcook them I always recommend that we allow the cookies to rest on the baking sheet for two minutes before transferring to a cooling rack So while we wait those two minutes I'm going to gather my favorite tools here; a nice, flat, sturdy cooling rack and a nice, thin, metal spatula always works best for removing cookies from a baking sheet Let's transfer them to the cooling rack after those two minutes There truly is nothing better than fresh-baked cookies, if you ask me

Definitely my favorite dessert in the whole world Alright, I'm going in Let's see This one looks really gorgeous These cookies are so soft and moist and of course they will firm up as they cool, but I'm not going to wait Mmm Yum Delicious

Mmm That coconut is so subtle, but it adds a really nice texture A little hint of coconut

and then you have that pineapple, which you think would be overpowering, but it's not It's just enough to let you know it's a Hawaiian inspired cookie Mmm
