Hearty Minestrone Soup Recipe – Cooking with Bosch



Minestrone Soup Dice 200g of Green Zucchini 200g of Yellow Zucchini Peel and Dice 2 Carrots Peel and Chop 3 Large Celery Sticks Slice 250g of White Cabbage Peel and Slice 1 Onion Finely chop 2 Garlic Cloves Blend 400g of Canned Whole Peeled Tomatoes to a Purée Break 100g of Spaghetti into shorter pieces Heat 50ml of Vegetable Oil in a Large Pot over Medium heat Add 1 Sliced Onion 2 Diced Carrots 3 Chopped Celeries 50g of Bacon 400g of Diced Green & Yellow Zucchini Season with a Pinch of Salt A Pinch of White Pepper Powder Cook for about 10 Minutes Stir ocassionally until the Vegetables soften Add 2 Chopped Garlic Cloves Fry for another 1 Minute Stir in 2 Tablespoons of Tomato Paste Coat the Vegetables with Paste Pour in 400g of Blended Tomatoes 1 litre of Vegetable/Chicken Stock Bring the Soup to a boil Allow the Soup to Simmer for a more intense taste Let them Simmer till they Soften Add 250g of Chopped Cabbage Add 250g of Drained Tin Cannellini Beans 100g of Shortened Pasta Simmer until the Pasta is cooked If the Soup is too thick, add some Stock to reach your preferred consistency Garnish with Chopped Parsley Extra Virgin Olive Oil A Pinch of Salt
