Herb Crusted Lamb Loin with Herb Roasted Potatoes and Ratatouille Part 1: Herb Crusted Lamb Loin Marinate 6 Pieces of Lamb Loin with Pepper Salt 60g of Chopped Garlic Add 2 Tablespoons of Cooking Oil to a Medium Heated Pan Sear the Marinated Lamb Loins Remove Loins from pan when all sides are seared Roast Loins in Oven for about 5 Minutes at 180 degree celcius Mix 400g of Bread Crumbs 1 Tablespoon of Italian Parsley 1 Tablespoon of Rosemary Spread them out on a plate When the Loins have cooled, soak them in 3 Beaten Eggs Then coat the loins with the Herbs and Crumbs Mixture Shallow fry the Loins with the Remaining Clean Oil Remove once the crust is crisp and light brown Part 2: Herb Roasted Potato Add 1 Tablespoon of Softened Unsalted Butter to a Medium Heated Pan Add 600g of Boiled Potatoes Fry and coat Potatoes with Butter Add 60g of Chopped Garlic 1/2 Teaspoon of Finely Chopped Italian Parsley 1/2 Teaspoon of Finely Chopped Rosemary Add Oil from searing the lamb Season with Salt and Pepper Roast Potatoes in Oven for about 6 Minutes at 190 degree Celcius Part 3: Ratatouille Blend 500ml of Whole Peeled Tomatoes Add 100ml of Cooking Oil to a Medium Heated Pot Fry 50g of Chopped White Onions 200g of Cubed Eggplant Fry till softened Then add 100g of Chopped Red & Green Bell Peppers 1 Tablespoon of Softened Unsalted Butter 80g of Chopped Garlic 1 Tablespoon of Finely Chopped Italian Parsley 1/2 Tablespoon of Finely Chopped Thyme 3 Tablespoons of Tomato Puree Season with Salt and Pepper Increase the heat Add 500ml of Blended Tomatoes 100ml of Chicken Stock Bring to a boil and allow mixture to simmer till vegetables are fully cooked and gravy has reduced Spilt Ratatouille into dishes Plate Potatoes on Ratatouille Slice Loins into pieces Place Sliced Loins on Potatoes and Ratatouille Garnish with 10g of Sea Salt Crystal 10g of Fresh Ground Black Pepper 20ml of Extra Virgin Olive Oil
