Hi everyone! Welcome back to our channel! Today on Cooking Up Love we're making cheesy Jiffy tamale pie This delicious Texas tamale casserole is filled with layers of Jiffy cornbread and cheesy taco spice ground beef all using ingredients that you probably already have it's simple to make feeds a bunch of people and it's full of tamale inspired flavor and it's even better when it's smothered with this homemade queso sauce here's a quick look at our ingredients they've also listed them in the entire recipe in the description box below begin by preheating the oven to 400 degrees next we're going to tenderize the ground beef mix up a slurry using one-half teaspoon of baking soda and one tablespoon of water and sprinkle it over one pound of ground beef stir this up then mix up another batch the slurry a half teaspoon of baking soda and a tablespoon of water and stir it in then let this sit for about five minutes heat a large skillet over medium heat and add about a tablespoon of oil add the ground beef and stir to break it into small pieces cook until it's almost done then add the spices 1 teaspoon of better than beef bouillon one and a half teaspoon chili powder 1 teaspoon garlic powder one teaspoon onion powder 1/2 teaspoon cumin mix this all together and continue to cook the ground beef for a few more minutes until it's done add salt to taste I'm adding 1/2 teaspoon of salt next make a cornstarch slurry using 1/2 TSP corn starch and 1 tablespoon of water add 1/2 cup of water to the ground beef and then add in the cornstarch slurry stirring and cooking until the mixture thickens if you're new to our channel we'll show you how to make homemade food that's easy and delicious and perfect for sharing with everyone you love I'd love to have you join us every week when we share new recipes subscribe to find out when we've posted a new one add 1 cup of shredded cheddar cheese and stir it into the ground beef mixture to melt then remove it from the heat next we'll mix up the jiffy corn muffin mix you can also use your favorite homemade cornbread recipe for this beat one egg add one box of jiffy corn muffin mix and one tablespoon of melted butter add 1/2 cup of milk and one can of creamed corn then mix until it's well blended add 1/2 cup of shredded cheddar cheese and stir add a quarter cup of flour and stir to blend grease a 13 by 9 inch baking dish with butter then spread a layer of cornbread mix on the bottom lay around the ground beef mixture then pour on the remaining cornbread mix trying to distribute it evenly across the top you could also add some extra cheese on top before popping it into the oven bake in the 400 degree oven for about 25 minutes until the top is set and golden brown then remove from the oven and let it set for about 10 minutes I'm going to serve ours with a homemade queso sauce let me show you how to whip it up here's all we need for the key so dice 1/2 onion and 1 seeded jalapeno pepper saute with one tablespoon of oil over medium heat until they're softened make a cornstarch slurry mixing one tablespoon of cornstarch with about one tablespoon of milk pour one cup of milk into the sauteed vegetables and heat add the cornstarch slurry stir and cook to thicken at about eight ounces of melting cheese I'm using Velveeta cut into cubes which will help it melt faster cook this mixture of her medium heat stirring to melt then salt to taste I'm adding a half teaspoon of salt plus a half teaspoon of cumin stir the mixture to blend and hold this over low heat until you're ready to serve and here's our tamale pie hearty layers of cheesy cornbread cheesy tamale beef filling all topped off with our homemade creamy spicy queso so delicious I think you're going to love it and if you like this recipe consider sharing our channel with a friend and if you love to entertain check out our potluck favorites playlist alright I will see you in the next video
