Hello friends, welcome to my channel" Recipes by Roopa" Today I am going to share KHAJA SWEET'S recipe with you

It is also known by the name "CHIROTI" This is a very popular Traditional sweet of Bangal and Bihar People make this sweet specially on the occasion of Marriage and Dusshara If you like my recipe of Khaja sweet please like this video and do not forget to subscribe my channel too Now lets see how to prepare Khaja sweet

Now lets see how to prepare Khaja sweet Ingredients For Khaja sweet: Music Ingredients For Khaja sweet: For Khaja sweet we need: All purpose 1 cup Sugar 1 cup

4 tbs ghee Oil for frying If you want use ghee for frying Cardamom powder 1/4 tsp Rice flour 1-2 tbs

Water 1 cup Lime juice 1/2 tsp For khaja sweet first we will prepare the dough Take a mixing bowl Add flour to it Ghee 2 tbs

Mix it well It got mixed well Now add water in small batches and make a soft dough Do not add too much water in one go Add a little water and mix Again add water and knead like the same way make a smooth dough coat the dough with a little ghee

Dough is ready As you can see i made a soft dough coat the dough with a little ghee Cover it and Keep aside for 20 minutes with this I'll prepare one string sugar syrup Mix it well Now I'll prepare sugar syrup Take a pan over the heat and add sugar to it

then the syrup will be ready Add 1/2 cup of water to it Now my one string sugar syrup is ready with this I'll prepare one string sugar syrup Mix it well

Sugar syrup is boiling now cook it for more 3-4 min on high flame then the syrup will be ready

I cooked this syrup for 5 minute on high flame Now my one string sugar syrup is ready I'll show you how to check it I switched off the flame Now lets check is this one string syrup or not Take a drop of syrup in between thumb and finger rub a little

slowly open the fingers, if you will get a string that means syrup is ready (as shown in video) Mix it well and make a smooth paste Paste is ready If you don't have rice flour use all purpose flour to make this paste

Now add cardamom powder too the syrup and lemon juice First knead the dough for 1 more minute I knead it for a minute' Now I'll make equal size of balls out of this dough Lemon juice helps not to crystallize the sugar syrup Now cut equal size of portion from it

Mix it well Sugar syrup is ready now keep it aside Before rolling it spread some flour on it so that it will not stick on the surface Now time to make a paste with rice flour and ghee One sheet is ready now Take a bowl and add rice flour The same way roll all the rest sheets

and 2 tbs ghee to it Mix it well and make a smooth paste Paste is ready If you don't have rice flour use all purpose flour to make this paste Put the another sheet over it Again spread the past on the second sheet Now time to give shape to khaja sweets

First knead the dough for 1 more minute Like the same way I'll put another sheet, here I am using four sheets to make one roll for making layers If you want more layers use 5 or 6 sheets in same way I knead it for a minute' Now I'll make equal size of balls out of this dough Press a little so that it can stick nicely Roll the dough and shape it like a cylinder

Now cut equal size of portion from it First cut the side edges to get perfect shape Now cut equal size pieces I made 8 equal size balls now I'll roll them and make thin sheets (like we roll roti) I made 10 balls Before rolling it spread some flour on it so that it will not stick on the surface

Roll it really thin One sheet is ready now As you can see I rolled it very thin The same way roll all the rest sheets My all sheets are ready Now lets start making the Khaja sweet

Take one sheet spread the paste over it It is very well spread now Put the another sheet over it Again spread the past on the second sheet Second sheet is ready now Put the third sheet over the second one Like the same way I'll put another sheet, here I am using four sheets to make one roll for making layers

If you want more layers use 5 or 6 sheets in same way I am spreading the past on my last sheet Now I am going to roll it Press a little so that it can stick nicely One roll is ready Now I'll cut the roll in 1/2 inch pieces First cut the side edges to get perfect shape Now cut equal size pieces I cut all the pieces I used 4 sheets to make the roll and out of the roll I made 10 balls

Now I'll roll them Apply some dry flour on the Khaja ball Remove the extra flour by shaking the ball now roll it on the edge of the dough as shown above Roll the khaja balls with light hands

I rolled one khaja The same way I'll roll rest of the khaja balls
