Ingredients:

1/4 Cup (28g) PROTEIN
1/2 Cup (55g) COCONUT FLOUR
1 teaspoon Baking powder
1 /2 teaspoon SALT
2 eggs
1/2 CUP ALMOND MILK

  1. So I made these and they are decent. I made a couple changes. I used Quest Multi-Purpose Mix because of its neutral flavor. Also, a whey/casein blend works better for baking to prevent dryness. Also I did 1/4 cup coconut flour and 1/4 cup all purpose flour to cut down on the sponginess. I also added a tablespoon of I Can't Believe It's Not Butter light to the batter.

    It wasn't crumbly but it was the perfect consistency to put in my silicone muffin pan. Dense and tasty. Now time to figure out the topping so I can make Anabolic Imitation Red Lobster Biscuits.

  2. I made this same recipe, followed it step by step and it made pancake batter! Was not crumbly dough at all. Maybe I can’t see the scale correctly. Haha, worked out as “cupcake muffins” I guess.

    I've bought the coconut flour today since it was the only ingredient I didn't have and will give it go tonight. I'm not doing keto so I'm not afraid of carbs, I'm wondering if you guys (or any other viewer for that manner) have any good suggestions or substitutes for ingredients (and if so, in what amounts? I'm from Europe so feel free to use metric units if that's your preference) to make this more balanced in terms of carbs/proteins/fats? I wouldn't mind making these with a bit more carbs and less fat in them (roughly same calories would be nice of course ^^)
