Peace be upon you! 125gm flour by weight You can either make by wheat flour alone, or by all purpose flour alone Friends, I had uploaded a video on 'Ghujia' recipe Many viewers have asked me about the oil I have used Today we will tell you about the oil This is Wagga Wagga canola oil This oil is made in the Wagga Wagga pollution free lands of Australia It does not consist of any odour or smell It is a very light oil and its taste is neutral Mix everything properly Add water little by little Lukewarm water is used here Add water as required Prepare a semi-soft dough That is not too hard and not too soft The semi soft dough is prepared Cover it with a cloth which is slightly wet and keep aside for 30 minutes Let's prepare some sauces Let's fry some vegetables now Saute the garlic for 10 seconds medium size onion is used The onions are soft now, the flame is low We have used frozen corn here 1/4th cup corn is used Flame is on medium Saute for 1-2 minutes Make sure the vegetables don't turn soft Keep it slightly crunchy You can also use green peas in place of corn You can boil the peas and add in the mixture We have sauteed the vegetables for 2-3 minutes We will add the sauce prepared here with the flame on low Saute for 1 minute with the sauce medium sized potato is used here you can also use coriander leaves in place of green onions Mix everything properly Check the consistency of salt Add more salt if required Mix all ingredients properly and cook gradually for 2 minutes and then put off the flame Let's start making the paratha The dough was kept aside for more than 30 minutes Let's cut into small dough balls the size of roti Apply some dry flour and flatten the bread Flatten it into a thin bread and not very thick Prepare a thin and large bread as shown here Fill the center with the mixture (square shaped) Fill the mixture in square shape as shown here Do not put too much mixture Cover both the sides as shown here Cover the other sides also Cover and seal all sides properly So that the mixture does not come out while frying Similarly prepare the other parathas In this quantity of batter and flour We have prepared 6 mughlai parathas Heat oil in a vessel Usually we use olive oil as a healthy option Since olive oil has a low smoking point We cannot fry or cook food in olive oil Wagga Wagga oil can be used to cook food Fry & marinate too All details of this oil is given in the description Links are also provided Oil is heated, flame is lowered Put the paratha as shown The folded side will be put inside the oil Do not increase the flame So that the paratha is nicely cooked from within If you do not wish to deep fry You can also shallow fry in a pan Turn over after 4-5 minutes It has a nice golden brown color Cook the other side on low to medium flame for 3-4 minutes The other side has a golden brown color too Apply oil on the sides So that the edges are cooked properly The paratha is fried from both sides
