Smoked Salmon with Mushroom Risotto Chop Italian Parsley Slice 300g of Button Mushrooms Chop 60g of White Onions Add 50ml of Cooking Oil to a Medium Heated Pot Fry Chopped Onions till soften Add 400g of Carnaroli or Aborio Rice Coat Risotto with Oil Deglaze with 200ml of Dry White Wine Slowly add 2 litres of Chicken Stock Stir occasionally to prevent Chicken Stock from sticking to a pot Gradually add more Stock Keep stiring till the Broth is cooked or when the Stock has achieved its desired texture Add in Sliced Mushrooms Cook for another 1 Minute Season with Salt and Pepper Add 2 Tablespoons of Unsalted Butter Stir till the Butter melts Add Smoked Salmon 30ml of Extra Virgin Olive Oil Add 10g of Fresh Ground Black Pepper 10g of Sea Salt Grate Parmesan Cheese over dish Garnish with 1 Tablespoon of Chopped Parsley
