Cooking with Bosch Nasi Goreng Ayam Kunyit with Pickles Part 1: Pickles In a medium pot, boil 100ml of Water 150ml of White Vinegar 150g of Sugar Once boiled, set the Pickling Liquid aside to cool Slice 1 Medium Carrot Slice 1 Medium Cucumber Crush 2 Pieces of Shallots Crush 2 Pieces of Chilli Padi Add Crushed Shallots and Chilli into the Pickling Liquid Place an empty bowl over a bowl of Ice Transfer the Pickling Liquid, Crushed Shallots and Chilli into the metal bowl Add Sliced Carrots and Cucumbers Let the ingredients infuse Part 2: Rice Dish Cut 250g of Boneless Chicken Thigh into smaller pieces Chop 2 Cloves of Garlic Chop 2 Shallots Season Chicken with 1 Tablespoon of Chopped Garlic 1 Tablespoon of Chopped Shallots 1 Teaspoon of Turmeric Powder Season wih Salt and Pepper Let it marinate for 40 Minutes or more Beat 2 Eggs In a large non-stick frying pan, heat up 2 Tablespoons of Oil Pour in the Eggs, stir until cooked and break into smaller pieces Increase heat to medium and melt 1 Tablespoon of Butter Fry the Marinated Chicken Remove Excess Marinate In the same pan, add in the rest of the Shallots and Garlic 2 Small Bowls of Overnight Cooked Rice Scrambled Eggs 1 Tablespoon of Kicap Manis 2 Tablespoons of Light Soy Sauce Mix well Garnish with Coriander Leaves Serve wtih Pickles and "Keropok"
