Namaste, this is Pooja Welcome to Indian treasures Today's dish is Rasmalai a dessert from Bengal I am very excited to share this dish as it is my favourite dessert and this recipe has been shared with us by Aditya Garg, a 10th standard student, he likes to experiment in the kitchen this is a four step process first we will prepare Chena take 1 litre full cream milk boil this the milk has started to boil reduce the heat to low and add 2-3 tablespoon vinegar and stir it continously, till the milk curdles turn off the gas filter this through a cotton cloth squeeze it a bit pour cold water over it to remove the vinegar odour squeeze it and remove all the water Step 2: take 750 ml milk boil it once the milk starts to boil add chopped almonds (4-5) chopped pistachio (4-5) 2-3 teaspoon cardamom powder saffron (about 10 strands) now add half cup sugar cook this on low flame till the milk becomes thick kepp stirring the milk every 10 minutes third step is the preoaration of Chena tikki place the chena on a plate mash it with your palm till it gets soft just like this knead it some more dont forget to stir the milk in between this has now become soft add 1 teaspoon cornflour knead it again cornflour is used to bind the chena properly make small palm sized balls don't make the balls too big, these will later double in size Final step is the preparation of the sugar syrup

take a wok, add 750 ml water add 3/4 cup sugar bring this to a boil the water has started to boil now add the chenna tikki one-by-one keep this on high flame let it boil for 2 minutes now, cover the wok with a lid and cook for 10 more minutes on high flame as you can see they have doubled in size this sugar syrup can also be stored in refrigerator for upto 2 months this can then be used for preparation of halwa or other sweetdishes turn off the heat the Ras (milk mixture) is also ready dunk the Chenna balls in the Ras mixture let them soak for 3-4 hours you can also place this in a refrigerator chilled Rasmalai is ready enjoy! hope you liked this recipe please subscribe to my channel like and share it with your family and friends see you next Friday with the next recipe of this series till then bye 🙂
