today i will show you how to make ras malai transfer the milk into a vessel and bring one boil on high heat once boil come start adding lemon juice gradually stir it in between once milk starts curdling , turn off the heat keep a muslin cloth into a deep bowl transfer the curdle milk into this drain the water now pour fresh water over the chenna sqeeze excess water and tie it, hang it for an 1/2 hour meanwhile, transfer milk ( for rabri ) into an open vessel, bring one boil once boil come, add saffron, almonds and pistachios add in condensed milk as well you can add sugar instead of condensed milk cook it till milk reduces its 1/3 part its done, add in cardamom powder and turn off the heat after 1/2 an hour take out the cheese from muslin cloth now mash it with your palm for at least 10-12 min add 1 tsp corn flour, mix it mash it with patience 🙂 till it become soft and smooth its been approximately 12 min and it has become soft and smooth take small portion and make ball shape then flattened it for sugar syrup take 6 cups of water , bring one boil on high heat once boil come, add 1 cup of sugar and mix it till sugar gets completely dissolve once sugar dissolved completely, add in flattened cheese balls keep the flame on high heat, do not simmer cover it and cook it for 18-20 min on high heat its been 18 min, and they are done, turn off the heat and let them cool down transfer balls into an open vessel and pour the sugar syrup as well over it let them cool down on normal temperature squeeze excess syrup from balls and put them into a serving bowl now pour the rabri over the balls, keep it into refrigerator for at least 2-3 hours, then serve for best result, serve it chilled
