Namaste, we welcome you to PapaMummyKitchen Today we're going to prepare India's famous snack – Samosa When we go to different States within India we get different varieties of Samosas In some places Samosas are little sweet in some places they're made of vegetables Samosas are different in many places But today the Samosas that we're preparing are simple Potato Samosas

Normally in Potato Samosas the potatoes are boiled but today, in the Samosa that we'll cook we'll be frying the potatoes before preparing masala as a result, the masala we be dry, once prepared and dry masala usually helps make good Samosas Also, when we fill up dry masala into the samosa upon frying, the outer layer of the samosa is cripsy and when we open it up we find that the dough or flour is also cooked So, for this preparation the key ingredients are – So let's start preparing Samosas Firstly, I'll cut potatoes in big pieces & prepare them for deep fry and while he's cutting the potatoes let's knead the dough for Samosas First, we'll add Ajwain into the flour we've added 1/2 tsp Ajwain We'll add 1/2 tsp of Salt and mix is thoroughly Also we'll add approx 4 tsp Edible Oil And we'll mix is thoroughly By adding edible oil, the outer layer of the Samosa becomes quite crispy And now we've mixed everything properly and we can check it in our palm like this so this seems to have the perfect amount of oil in it Now, we'll knead it by adding small portions of water we'll add some more water We need to make sure that the dough is not too wet Our dough is now ready We'll keep it to set for about ten minutes Potatoes are also ready to fry now and we've already heated oil in the pan, so, let's fry the potatoes now Potatoes will take around 5minutes to fry we're frying the potatoes in low flame to avoid discoloration and to cook them all the way inside so that the masala comes out dry Its been five minutes now Potatoes pieces have started floating on top meaning that its almost ready and to check it we'll take out one piece of potato and we'll poke it with a match-stick the stick has gone all the way through which means the potatoes are ready now we'll not let them turn brown Now, we're taking out the potato pieces Potatoes don't consume much oil in frying so, even the masala won't be very heavy Now, we'll mash the fried potatoes mash it with a light hand and don't make it a paste Potatoes are mashed now, lets add spices into it now firstly, Salt around half teaspoon 1/2 tsp mirchi powder 2 chopped Green Chilly 1/2 tsp Ginger 1/2 tsp Cumin 1/4 tsp Turmeric powder 1/4 tsp Garam Masala powder A pinch of pepper 1/2 tsp dried Podhina (Mint) 1/2 tsp Amchoor powder 50 gm Green peas 10 chopped Cashew-nuts 20-25 Raisins 1/2 tsp Sugar

And let's mix it all together The masala is now ready Now, we'll make small spheres of it to be filled into Samosa
