SHORTCRUST PASTRY – The recipe to prepare the dough with the planetary mixer



Sift 500g (110lb) of flour and add the vanilla sugar and a pinch of salt into the mixer bowl

Sift 150g (033lb) of icing sugar Grate the zest of an organic lemon Cube 250g (055lb) of cold butter

Equip the planetary mixer with the leaf-shaped-whip and start to combine the ingredients Add the cold cubed butter and 6 egg yolks Combine the ingredients until they aggregate to a ball of shortcrust pastry Transfer the shortcrust pastry dough on a pastry table, compact it and wrap it into the cling film Let the shortcrust pastry dough rest into the fridge for 30 minutes
