Welcome to Pot to plates kitchen, I am going to show how to make delicious Stuffed Brinjal Masala curry Request viewers to subscribe to Pot to Plates channel and press Bell icon next to it, so that you will receive notifications for new Videos Soak 1 gooseberry size tamarind in Lukewarm water for 30 mins and make tamarind Puree Take the Brinjal and cut in to make way for stuffing the masala

Soak them in water for sometime In a dry heated pan, add 1/2 tsp fennel seeds & 1/2 tsp pepper corns and saute it well Add 50 grams fried Peanuts after removing the skin, add 2 tbsp sesame seeds and saute well Use either white or black sesame seeds once sesame seeds started to Pop, add 1/2 cup Grated coconut and saute till the aroma comes out No need to saute till golden brown Allow it to cool down

Then add 1 tbsp red chillies powder,15 tbsp coriander powder, 1 tsp cumin seeds powder,salt and grind it well to make dry masala powder Now stuff this dry Masala into the Brinjals,We are going to fry this in oil before adding it into gravy Stuff tightly so that masala wont come out while frying in oil Stuff all the Brinjals with dry masala like this

Left out masala will be used in gravy In a heated Pan, add 4 tbsp gingelly oil and place the stuffed Brinjal one by one Close the lid and cook it for 5 minutes Maintain Low flame throughout After 5 mins, turn the brinjals to other side and close the lid and cook for 5 mins again

Brinjals outer layer will turn soft Make sure it don't get burnt Once it is ready move it to another Vessel In a heated Pan, add 4 tbsp gingelly oil, 1/2 tsp mustard seeds, 1/4 tsp fenugreek seeds, 1/2 tsp cumin seeds and 15 finely chopped shallot onions & saute well Add Curry leaves Once onion becomes tender add 2 finely chopped tomatoes and saute well

Once tomatoes are cooked well, add 1/4 tsp turmeric powder , asafoetida and saute Now add the leftover stuffing dry masala powder and mix well Add the tamarind Puree to this and mix it Add water as per requirement As we are using coconut and peanuts this gravy gets thicker

Add water accordingly Now add salt as per requirement, we have already added some salt while preparing the stuffing masala Add salt bearing that in mind Once the gravy started boiling, add the Brinjals with the fried oil /masala and allow it to boil for 2 mins After boiling , add grated jaggery and mix

This is optional but it enhance the taste of gravy Leave it to boil for another 5 mins after closing the Lid After 5 mins, you can see the oil separated from the Brinjal and floating in the gravy Now Delicious Stuffed Brinjal Gravy is ready You can also try this recipe yourselves and share your comments/ experience with me
