Hello Friends! Welcome in Ashu's Home Kitchen Today, We are going to make Turai Masala Ingredients Oil – 3 tbsp in dry spice 3 nos dry red chilly 1 nos Bay leaf small stick of Cinnamon 1 tsp cumin seeds, 4 nos black pepper 2 nos clove 3 tbsp curd, dry fenugreek leaves 7-8 nos garlic cloves dice cut 2 inch ginger chopped 2 nos medium size onion dice cut 2 nos green chilly cut in small pcs 2 nos tomato cut in cube shape coriander leaves for garnishing Spice – Turmeric Powder Spice – Turmeric powder Salt to taste

Coriander Powder & Kitchen King Masala Chilly Powder, Cumin Powder & Garam Masala 400g Ridge Gourd peeled & cut upper & bottom part take middle portion In middle portion give 2 small cuts now add tomato, onion, garlic, ginger, green chilly in mixer grinder prepare the fine paste then we will start our further process let heat up the wok (Kadhai) add 3 tbsp oil (Sun flower oil) let it heat add dry red chilly, Bay leaf, cloves, black pepper, cinnamon, cumin seeds all at once stir for a while keep the flame on sim after one minute add 1/2 tsp turmeric powder 1/2 tsp red chilly powder stir consistentlyfor 30 sec keep flame on sim only otherwise it will burn add the fine paste prepared in mixer grinder stir it

for a while add 1 tsp coriander powder 1/2 tsp Kitchen King Masala 1/2 tsp Cumin powder 1/4 tsp Garam Masala add 1/2 tsp salt to cook it fast keep it on medium flame keep on steering till the oil will come out from the wok

oil will be visible now turn the flame on sim add the mixed curd stir slowly and mixed it properly up to the content will loose some water now oil is visible on content

add the pcs of Ridge Gourd now coat the paste properly by soft hand on Ridge Gourd pcs add pinch of salt to taste cover it for 8-10 minutes Check it with stirring it slowly in between stir the content by soft hand 1-2 times (within 10 minutes) with use of knife check whether it cooked or not now its ready add some dry fenugreek leaves rubbing it your palm & spread it in whole content

it will enhance the taste more & more now mix it now switch off the flame add the green coriander leaves & serve it
