Hello everyone, and welcome back to Hookom on Health! As always, I'm Amanda, and today I'm going to show you how to make my Turkey and Sweet Potato Skillet This recipe is super simple, healthy, and delicious
It uses about 10 affordable, accessible ingredients and takes about 45 minutes from start to finish, making it perfect for a busy week Plus, it keeps well leftover, making it ideal for a work week lunch So let's get started! The first thing we're going to do is prepare all of our vegetables Once you start the cooking process with a skillet meal, things move quickly, so preparation is key! Dice your onion, mince your garlic, chop your sweet potato into about 1 inch cubes, and chop your fresh parsley You can peel your sweet potato if you'd like, though personally, I keep the peel on for the higher fiber and nutrient content
Then, we're ready to start cooking! Heat some olive oil in a high-walled skillet over medium-high heat Once heated, add your ground turkey and brown until cooked through, or about 6-8 minutes Once your turkey is cooked through, it's time to add our veggies Add your diced yellow onion, and saute until translucent, or about 2-3 minutes Then, add your minced garlic and saute until fragrant, or about another 30 seconds
Finally, add your sweet potatoes and continue sauteing for about 10 minutes You'll know your sweet potato is cooked through when it can be easily pierced with a fork Once your veggies are cooked, it's time to season our skillet Add ground cumin, smoked paprika, and cayenne pepper Stir well to evenly season
Then, sprinkle mozzarella cheese overtop the skillet Remove from heat once the cheese is melted Finally, garnish with fresh parsley and enjoy!
