Vegan Chickpea, Cashew & Broccoli with Garlic Sauce Skillet



(Music) today we are making one of my favorite dishes on the blog it is asian-inspired it's packed with protein I mean you come in the house 15-20 minutes later boom this thing is ready on the table the family's happy screaming your name, crowd going wild, wait(screeching noise) they should be screaming my name I mean I am the person that showed you how to make it you know what it's all good it's cool I'm just not gonna show you how to make it then I'm joking Let's make this together starting out with some brown rice

white rice works too a good quality vegetable stock you know it's a good quality when it's as dark as apple cider vinegar stir that together and bring to a boil over medium heat, cover, turn down to simmer while you put together the star of the show get out your cutting board and that best friend you like to use in the kitchen whenever your daughter starts talking about boys now show that head of broccoli who's boss

once you have about 4 cups of that move on to start mincing the garlic what I like to do to peel these garlic cloves quickly is I put my best friend down on top of the garlic and push it down to crack and loosen the skin this makes it so much easier to peel now you can finish up your garlic and set aside then chop up your cashews next in a bowl whisk together your sesame oil, soy sauce, garlic chili sauce optional but delicioso and arrowroot powder then break out the biggest skillet you've got and let's get ready to rumble begin here with sesame oil in the skillet on medium heat then add the garlic into saute for just a minute add in the broccoli and our sauce then stir to help marry those flavors together before covering it for about six to eight minutes lastly add in your chickpeas and your unsalted roasted cashews then cook to perfection that's it thank you so much for tuning in see you next week (music til end)
