Vegetable Pulao (Pilaf) with Mint Raita Recipe – Cooking with Bosch



Cooking with Bosch Vegetable Pulao and Cucumber Mint Raita Part 1: Raita Chop 2 Cloves of Garlic Slice 1/2 a Cucumber Chop 2 Tablespoons of Mint Leaves Slice 1 Spanish Onion Juice 1/2 a Lemon Place the Sliced Onions and Cucumbers into a bowl Add 50ml of Plain Yogurt Chopped Garlic and Mint Leaves Add in Lemon Juice Season with Salt Mix well Set it in the chiller Part 2: Vegetable Stock Chop 1 Carrot 1 Stalk of Celery 1 White Onion Boil 1L of Water Add Chopped Carrots, Celery, and White Onions Let it simmer for about 40 Minutes Strain the Vegetables from the Stock Part 3: Pulao Wash 150g of Basmati Rice in 2-3 Changes of Water Soak the Washed Rice in Water for 30 Minutes Drain before using Break 1 Cinnamon Stick into 3 Pieces Slice 10g of Fresh Ginger 50g of French Beans 1 Green Chilli Dice 100g of Potatoes 1/2 a Carrot 2 Tomatoes In a thick-bottom pot, heat up 3 Tablespoons of Oil Add Sliced Ginger to the pot 1/2 Tablespoon of Cardamom Seeds 1 Teaspoon of Black Peppercorns 1/2 Teaspoon of Cumin Seeds 5 Pieces of Cloves 1/2 a Nutmeg 2 Pieces of Star Anise Broken Cinnamon Sticks 3 Pieces of Bay Leaves Fry till fragrant Bundle the spices in a piece of Cheese Cloth or Cooking Satchet Bag In the same pot, melt 1 Tablespoon of Unsalted Butter Fry 50g of Broccoli Florets 50g of Cauliflower Florets Chopped Vegetables Add A Pinch of Turmeric Powder Place the Vegetables in a bowl In the same pot, add in the Drained Basmati Rice Spice Bag and Vegetable Stock Bring to a boil Season lightly with Salt and Pepper Simmer for 10 Minutes with the lid on Stir in Diced Potatoes Let it cook for another 20 Minutes with the lid on Then stir in the Vegetables Add in 2 Tablespoons of Unsalted Butter Cook for another 8-10 Minutes with the lid on, till the rice and vegetables are fully cooked Garnish with Chopped Coriander Serve with Raita on the side
